Saudi Spiced Lamb and Date Pilaf

🥕 Ingredients

  • 500g lamb shoulder, cubed
  • 2 cups basmati rice
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup pitted dates, chopped
  • 1/2 cup almonds, toasted
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • Salt to taste
  • Fresh coriander for garnish
  • 4 cups chicken stock

👨‍🍳 Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic, ginger, and spices, and cook for 2 minutes.
  4. Add lamb cubes, salt, and cook until browned on all sides.
  5. Stir in basmati rice and cook for 2 minutes, coating in spices.
  6. Pour in chicken stock, bring to a boil, then reduce to a simmer.
  7. Cover and cook until rice is tender, about 20 minutes.
  8. Add chopped dates and almonds, and fluff with a fork.
  9. Garnish with fresh coriander and serve warm.
