Spiced Lentil and Rice Khichdi

🥕 Ingredients

  • 1 cup basmati rice
  • 1/2 cup lentils
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 2 green chili peppers, chopped
  • 2 tbsp vegetable oil
  • 4 cups water
  • Salt to taste
  • Fresh coriander for garnish

👨‍🍳 Instructions

  1. Rinse the rice and lentils separately under cold water.
  2. Heat oil in a large pot over medium heat.
  3. Add cumin seeds and sauté until they crackle.
  4. Add ginger, garlic, and green chili peppers; sauté for 2 minutes.
  5. Add turmeric powder and stir well.
  6. Add the rinsed lentils and rice to the pot and mix thoroughly.
  7. Pour in the water and add salt to taste.
  8. Bring to a boil, then reduce heat to low and cover.
  9. Simmer for 25-30 minutes until rice and lentils are cooked.
  10. Garnish with fresh coriander before serving.
